Our guest, Chris Cronin, chef at Union Flats Seafood Co. in New Bedford, will address “Underutilized: All the Delicious Local Fish We Aren’t Catching & Eating.” Over 100 edible fish species populate our waters. New Englanders tend to favor just a few, when dozens of others are abundant, and delicious to boot. .
Chris will share his views on why the whole sea-to-table system has become so limited; why consumers aren’t eating the right fish; and what the industry, from fishermen to distributors to chefs, is doing to make the right fish available and to educate consumers. We ask that you be vaccinated. Facemasks are strongly recommended.
